    What are you cooking tonight?

No restaurants? No problem. What are you cooking tonight or what have you cooked since self-isolation started?

Hard to get quality groceries where Iím at but hereís some of what Iíve made

Quinoa, black bean, red pepper, avocado, mango, hemp seed salad with lime juice

Baked cod with steamed green beans, roasted corn and butternut squash soup

Butternut squash ravioli with artichoke hearts and peas in Alfredo sauce

General tso marinated tofu with steamed broccoli and vegetable fried rice

Spinach, walnut, sweet potato, beat, lentil, carrot salad with maple Dijon dressing

Buffalo chikín salad with spinach, carrots, blue cheese, celery, onion, hot sauce

Champagne pear vinegarette marinated pork chops with roasted Brussels sprouts and butternut squash

Scrambled eggs with spinach, feta cheese, tomatoes, onions and hash browns

Everything babe with cream cheese and smoked salmon

    Avocado and hummus toast

Meat is hard to get in my area and I used to be vegan so Iíve fallen back on most of this recipes.

I'm working on buying my fourth grill. Looking at a pellet grill/smoker.

If you hate cleanup, the Big Green egg would be for you. When you need to clean it, open all the vents and get it over 700* and it basically cleans itself.

Pizza. Nothing brightens up a couple isolated cabin fever kids like making their own pizza.

Roasted Brussels on the side (they love that **** too).

Watermelon lemonade slushee - froze some cut up watermelon cubes, throw em in a blender with some squeezed lemon juice and a little maple syrup. Add just enough water to make it slushee but not too thin.

Kids love that. And Dad likes it with a touch of vodka.

Hmmm okay I just realized that sounds kind of involved which probably doesn't suit your "don't feel like cooking" purposes, but you could fry the egg instead of poaching it and make the polenta in the oven along with the sweet potato UPSers

Missing some ingredients, but I think I'm going to do my best dirty rice impression tonight.

A couple nights ago, made 3lbs of meatballs, half for sweet & sour, half italian style for spaghetti and meatballs.

Done some breaded chicken as it's something the kids will eat.
