Plodding down the field takes up time of possession, reducing the other teams offensive touches and thus scoring, and also tires out the opposing defense. There are reasons for doing things in certain ways. You can have a high scoring rushing attack. It just depends on your level of success. As an example, Seattle didn't outscore their opponents 150-30 (#2 scoring in a 3 week span all time) because they became pass happy.
