what stats would use to judge a player on these categories: hitting for average, hitting for power, strike zone judgment, baserunning ability, fielding range, fielding reliability, and throwing utility?

For hitting for average i would just look at batting avg.

For power I would look at IsoP (SLG-AVG)

Strike zone judgement I would look at stats like O-Swing%, Z-Swing%, K/BB is another good one.

    Baserunning I would use EqBRR.

For the fielding metrics I would just use the components of UZR.

And all of those things can be found at FanGraphs.com with the exception of EqBRR which is found at Baseball Prospectus.
