    Yeah I'm teaching in short sleeves today.

    Though I just realized that I'm showcasing all the bruises on my arms from volleyball last night. Oh well. Might as well look like I'm a smack addict now and then.

    So, I made panko crusted mahi mahi last night. Lightly fried it in a cast iron skillet.

    Then I cut up a mango, red bell pepper, a little bit of white onion, and a half a jalapeno and mixed that up. Bruised some cilantro and threw that in and let it sit for 20 minutes or so. Then I put a couple spoonfuls over the mahi mahi.

    Steamed some broccoli and made a garlic butter sauce to pour over that.

    And then made a coconut and pineapple yellow rice with a little jerk seasoning.

    My mango relish was really good mixed up in the rice, too.

    I just wanted to let everybody know how good it was.

    Does that keep the mahi mahi from drying out? I've always had problems searing mahi mahi. I almost always wind up having to drench it in whatever sauce I cook it in to keep it moist.

    Yea, it keeps it very moist. It's also a really quick way to cook it. And, I love the crust that the panko brings.

    When you're searing it, do you brush it with butter? Because that really helps keep it moist as well -- on top of giving it some nice browning.

    I usually go with olive oil when I cook fish, but I'll try SmartStart next time. I can't use real butter -- the whole Kosher thing...

    Really? Didn't know that. So can you use margarine or is that what smartstart is?

    Now i'm interested. Ari since you are kosher, how do you go out to eat?
